Apple Leather Anyone?

Dar hasn’t been feeling good today. She had blurred vision and dizziness and felt all around yucky. Here’s what I came home to. She was trying to relax on the couch while the kids mostly entertained themselves. Good thing too, cause it’s hard to settle down while keeping the munchkins happy.She called someone at Labor & Delivery and they told her the only thing that they could tell her, which was to come in. Matt came rushing in, thinking that the situation was really serious (miscommunication) and Dar decided to go get checked out. I stayed home with the kids while they went to the hospital. Luckily everything was okay but she was told to keep a watch on it and to come back if it happens again. I’m pretty sure it’s a blood pressure thing. She’s been having some pretty strong contraction and her feet are swollen like water balloons, that paired with the dizziness and blurred vision makes for a pretty miserable last month of pregnancy. We’re both looking forward to this baby entering the world.
We had some apples that were about to go bad so we decided to make something with them. We’ve done this once or twice before and it’s so simple and  turns out great so we gave it another shot. To make apple leather all you do is blend cored and washed apples and then dehydrate them. Simple. G is a great kitchen helper, she loves cooking and eating what she’s made. She had some trouble getting the melon-baller started. BEST WAY TO CORE APPLES!!!… wait… I could have used the little do-hickey we have that cores and slices in one move. Dang it! Oh well. It was fun this way. The apples would have blended faster if they were cut up smaller too… next time.Our dehydrator only has one tray for making fruit leather but we had three trays worth of apple sauce so we improvised. I used freezer paper/wax paper and cut it to size. It worked okay but peeling it off was a bit of a pain. Saran wrap would have peeled off better but I’m not sure how I would have cut it to fit. I guess it wouldn’t have to fit exactly… I don’t know. I’ll figure it out next time. Either way it was yummy! Doesn’t it look like pumpkin pie filling?

Surprise of the night, G likes Cabbage & Onions. I had that cooking while we worked on the apple leather. It surprises me what she likes and doesn’t like sometimes.
